Corn Chips and Sunsets

Shepherdsville Sunset

As the weather turns colder, certain foods become more appealing.  One of my favorite cold-weather dinners is chili.  My wife makes killer chili and I love to top it with shredded cheese and corn chips.  While the cheese is optional, the Fritos are not.  She gave up questioning this years ago and now includes corn chips on the grocery list just assuredly as she does hamburger.

For whatever reason, today was the exception.  She called stating that she forgot to get Fritos at the store and asked that I grab some on my way home.  As a result of the detour, I ended up leaving Kroger as the sun was setting.  I pulled over at the Shepherdsville Post Office and took the following picture.  The one at the top was taken in Mallard Lakes.  I've never really thought that I would like a pond right behind my house, but after taking this I can see how some people would.

Anyway, back to the chili....

Erik-I love chili on a cold day too.  I usually open a can to get mine though.  Beautiful pictures too.

The real question is....with or without beans?

Posted by Lisa Heindel, New Orleans West Bank Real Estate (Keller Williams Realty Crescent City West Bank Partners) about 1 year ago

Erik - I love chili and sunsets!  I have a killer recipe as well, topped with chopped green onions, sour cream, shredded cheddar, chopped onions, and Fritos (toppings are optional or course - Thanks for the blast from the past - foodservice background!)  I'd enjoy seeing your recipe.  My mail is darla@ask4darla.com

I have forgotten how much I like chili, my wife is a vegetarian, and it's hard to cook chili for just one person. However, now that you mention it, I would like some.

Nice sunset pic! I really like how the clouds reflect in the pond. Temps in the Las Vegas valley have been hanging in the 70s, so it's not quite chili weather for us ... but you do have my mouth watering! I like it with onions, shredded cheese and a little sour cream.

Erika - Thanks for the comment about the pictures and I'm sorry about that canned chili thing :)

Lisa - I didn't know 'without' was an option.

Darla - Old family recipe.  If I told you, my wife would have to kill me (gulp).  j/k I have no idea what she puts in there.

JL - That is a tough one.  The sacrifices we have to make for loved ones...

John - This is a fairly new neighborhood.  I have driven through it dozens of times and was never really sold on the pond idea.  I took these pictures from the backyard of a vacant home this evening and could definitely see where it would be nice at times.  BTW - Onions and Sour Cream seem to be a popular preference here.

What a great title.  Friitos on chilli???  But you do have my curiousity stirring.  I will try it next time.

Charles - I was really glad that I pulled over.  Having my camera was a bonus.

John - Yeah, I played with the settings on my camera and am now much happier with the results.  House pics are okay if they are a little grainy :)

Shelton - You'll never go back!

Nice sunset photos.  The first one actually makes me feel like it's "warm", not cold.  Funny how beauty is in the eye of the beholder.  As for the chili - we like to add onions and cheese on top of ours.

Posted by April Hayden-Munson Realtor, Southeastern Wisconsin (RE/MAX Realty 100) about 1 year ago

Nicole - Anytime.  There is always plenty to eat.

Mel - I'm glad you liked them.

April - I took a few pics over the course of 10 minutes.  Some of the earlier ones show the colors of the leaves.  These probably give a more 'Fall' feel.  But, I thought this one came out the best.

Erik - great sunset shots, and, I agree, not much better than chili on a chilly evening, but a good new england clam chowder comes close. But then, there is not much better than chili anytime. Gotta have onions, though, and maybe some extra habaneros.

Tony - Hotdogs are definitely a great compliment to chili.  Thanks for stopping by.

Krogers up in your neck of the woods? I love me some chili too.

Posted by Greg Nino Houston Texas (RE/MAX West Houston Professionals) about 1 year ago

Myrl - Very well said.

Greg - Kroger is everywhere.  They'll even setup in towns that Wal-Mart wont.
